b. “How can we measure the qualities and desirability of a finished recipe both quantitatively and qualitatively in order to determine the success of our recipe experimentation?” We can measure the qualities and desirability of a finished recipe both quantitatively and qualitatively, by finding out the success of a cooking test in a lot of different ways.The first thing that you will need to know is what quantitatively and qualitatively actually mean. Quantitative usually means the measurements, like numbers and collected data. This shows us how much of something that is in there, like in our lemon bars how much lemon juice was in there. Qualitative means if they are just a yes and no answers. This will tell you if something is presented in a substance or if it isn't, like if the lemon juices if it is more sour or if it is less sour. In our experiment, our quantitative results were on the protein folding and unfolding and emulsion to understand how the different amounts of lemon juice could change the way that the lemon bars tasted. Our results show the 50/50 lemon bars were liked better than the other two choices. In our experiment we found out the while they were in the oven the proteins would come out of the lemon juice. When the lemon bars were being cooked there was a lot of different tasted and the way it was sour or not sour. In what way(s) is cooking like doing science and in what way(s) are they different? How are a cook and a food scientist similar or different? The ways in cooking like doing science is ever similar, such as the measurements, because there are so many possible ways into measuring a substance aka food. In our experiment we tried to change the acidity by making the lemon bars have more lemon juice in them or just water and no lemon juice in them or half water and half lemon juice. Our group also did tests on which leom bar had the best taste, we got our results from the class.We asked people which lemon bars tasted the most lemony and which one have the least sour taste. We also looked into the the folding and unfolding of proteins, to see if the lemon bars would change the way that they tasted. Cooking the food and having science are two completely different things such as combining something to make it taste really good or there could be a potential reaction may occur. Like finding a repair and following the exact instructions that it gives you. Also in this experiment we had to do science to make the experiment be just how we want it like measuring out certain foods and changing the recipe just a bit. When working with substances science works with small amounts and they use safety wear just in case of something happening. When cooking food you don't have to be as concise and you can do whatever you want to it. There are some major differences in cooking food and in science.
